Recipes> Roasted Pear with Ricotta and Honey
- 6 red bartlett pears (or any baking pear) halved, seeds removed.
- 4 tablespoons of butter
- ΒΌ cup brown sugar
- Juice of one lemon
- 1 tsp lemon zest
- 1/3 cup honey
- 1 tablespoon grated fresh ginger
- 1 container of Blue Ridge Dairy Ricotta Cheese
Preheat oven to 425 degrees. Grease a 9x13 baking dish and place pears cut side up.
In a small sauce pan, combine butter, sugar and lemon juice and heat until melted. Pour over pears. Sprinkle with lemon and roast for 45 minutes or until pears are golden brown. Mix together honey and ginger and set aside. Remove pears from oven and let rest for 20 minutes. To serve, arrange 2 pear halves on plate. Spoon a dollop of ricotta on each half and drizzle with gingered honey.
